Strawberry Rhubarb Smoothie

There are a few awesome produce items coming into season right now. I just planted my strawberries this past weekend, and rhubarb is on its way up. They pair so nicely together that I wanted to try them out in smoothie form.

Strawberries are an excellent source of polyphenols, and rhubarb is also high in antioxidants.

Try this out when your produce is ready sometime this spring.

Ingredients:

1 cup fresh organic strawberries (you can also use frozen)

1/2 cup fresh rhubarb (you can also use frozen)

1 Tbsp coconut oil (or MCTT oil)

1 cup vanilla protein powder of your choice

1 cup unsweetened oat milk

1 tsp honey* (you may only need this if your smoothie is too tart)

1/2 cup water** (you may only need this if your smoothie is too thick)

Method:

Blend and enjoy!
