Dr. Rachel’s Egg Bites | Fertility Naturopath

As you know, I am always trying to encourage my patients to get more protein. But getting enough isn't easy. And with our busy lives these days, it's best if protein can be portable so you can take it with wherever you have to go.

Enter egg bites! You can make these ahead of time and enjoy throughout the week.

Ingredients:

  1. 1 dozen eggs

  2. 12 slices nitrate-free turkey breast

  3. 1 cup spinach or kale, chopped small

  4. 1 small zucchini, diced

  5. 1/2 cup bell pepper of your choice, diced - optional

  6. 1/2 teaspoon onion powder

  7. 1/2 teaspoon garlic powder

  8. 1/4 teaspoon freshly ground black pepper

  9. 1/4 teaspoon sea salt

Method:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Line a muffin tin with 12 turkey slices.

  3. Beat a dozen eggs in a medium bowl.

  4. Add remaining ingredients into the bowl and mix up.

  5. Pour evenly between 12 slots in the muffin tin.

  6. Bake for 15-20 minutes.
