Dr. Rachel’s Banana Bread

This is one my favourite banana bread recipes. I whip it up in no time and it’s ready to enjoy throughout the week with a swipe of peanut butter.

Ingredients:

1 cup spelt flour

3 bananas, mashed

2 eggs

4 scoops collagen powder

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1 Tbsp apple cider vinegar or juice of 1 lemon

1/4 cup avocado oil

1/4 cup pecans, crushed (more for topping, if desired)

1/2 cup sugar-free dark chocolate chips (more for topping, if desired)

Method:

  1. Line a loaf pan with parchment paper.

  2. Preheat your oven to 375 degrees Fahrenheit.

  3. Combine bananas, eggs, vanilla, olive oil and collagen powder. Then add in apple cider vinegar or lemon juice.

  4. In separate bowl combine spelt flour, baking powder, baking soda, and sea salt.

  5. Add the dry ingredients to the wet and combine well.

  6. Now add in the chocolate chips and pecans.

  7. Pour into your loaf pan. Top with additional chocolate chips and pecans if desired.

  8. Bake for 35 minutes or until fluffy.

  9. Enjoy!
