I continue to be on a breakfast recipe kick these days!
Probably because I wake up famished most mornings after a night of multiple breastfeeds.
This recipe makes for a great breakfast that will keep you satisfied! There is fiber from the oats, even more from the chia, and some perfect antioxidants from the blackberries. Don't forget some protein and healthy fat, too.
Don't forget to prepare the night before!
Blackberry Chia Overnight Oats
1 cup frozen or fresh blackberries
1.5 cups unsweetened almond milk (or dairy-free milk of your choice)
1 teaspoon maple syrup
¼ teaspoon cinnamon
2/3 cups gluten-free oats
3 tablespoons chia seeds
- Add blackberries, maple syrup, cinnamon, oats, and chia seeds into a bowl and cover with milk.
- Place the bowl (covered) in the fridge overnight.
- Divide into 2 servings and top with more blackberries, freshly ground flax, and/or hemp seeds.
